Hello all! Hope you are all doing great. We are in excitement mode because next month is our Walt Disney World DVC vacation:) With that being upon us, I decided to do my next food blog on a favorite fall/winter dish, Chili & Beans. Mr. Disney had a recipe of his own that I found in my daughters cookbook that is delicious. I was surprised how close it was to my own, except for the alternation of beans. But not everyone likes beans and either leaves them out of the chili or cuts down on how many they put in. Like me, my daughter doesn’t like the beans. My husband can’t eat peppers so I chunk them up so he can pick them out. I also can’t use garlic as it bothers him too so I add more onion. So as you can see you can adjust this recipe as you need, happy cooking!
Chili and Beans Walt Disney’s Personal Recipe
2 pounds dried pinto beans
2 medium onions, sliced
1/4 c. vegetable oil
2 garlic cloves, diced
2 pounds lean ground beef
1 c. chopped celery
1 tsp. chili powder
1 tsp. dried thyme
1 (28 oz) can chopped tomatoes
Coarse salt and freshly ground pepper to taste
1) Wash and sort beans and soak overnight in water.
2) drain beans and place in a 2 qt. pot. Add fresh water to cover by 2 inches. Add sliced onion and simmer, covered, for 2 hours, until tender.
3) Heat oil in large pan and sauté garlic. Add beef and celery and cook until lightly browned. Add chili powder, paprika and thyme. Mix in chopped tomatoes. Cover and simmer for 1 hour.
4) When beans are tender, combine with meat, stirring gently. Add salt and pepper to taste.
Cook’s note: For a spicier chili, add 1/8 tsp. each of coriander, turmeric, chili seeds, fennel, cloves, cinnamon and ground ginger. You can also add dried hot pepper to taste.
My family enjoys Frank’s hot pepper sauce added to their bowl instead of the above. Cheddar Cheese topped on chili is yummy. Frito’s Scoops are great to pair with our chili:)
